The site sits within an 825,000 m² protected nature reserve on Mt. Kaikomagatake, and water is drawn from aquifers filtered through thousand-year-old granite, arriving soft and mineral-balanced at the mash tun.
Fermentation runs exclusively in wooden washbacks — a deliberate retention of heat in the cold mountain environment — where naturally occurring lactobacillus and resident microflora contribute the lactic, herbal complexity that defines Hakushu's house character. The Distillers Reserve draws from multiple malt types (unpeated to moderately peated) and a varied cask regime including American white oak ex-bourbon and Spanish oak ex-Oloroso sherry, assembled under Suntory's in-house Tsukuriwake philosophy — producing 100+ distinct malt styles without trading a single cask externally.
What separates this expression from age-stated Hakushu is its blender's freedom: no vintage or age constraint means the master blender can select barrels at peak aromatic expression rather than calendar compliance, pulling forward the smoke-and-citrus tension that defines the distillery's identity at accessible proof.
