When Malt Master David Stewart MBE invented cask finishing at Balvenie in the 1980s–90s, he established a principle the industry has since universally adopted — and the Caribbean Cask 14 is among its most direct expressions. Fourteen years of maturation in ex-bourbon American oak barrels builds the distillery's signature honeyed, rounded character before the spirit transfers into Caribbean rum casks seasoned in-house for a further 6–9 months, a finishing window long enough to impart tropical sweetness without erasing the bourbon-oak foundation. The whisky is drawn from Dufftown's Robbie Dhu Springs — soft Highland water that William Grant & Sons purchased surrounding land to protect — and distilled on copper pot stills taller than those at neighbouring Glenfiddich, a design choice that drives lighter, more aromatic new make. Barley is partly grown on the distillery's own Balvenie Mains farm and partly floor-malted on the 1928 malting floor, one of only ~7 still operating in Scotland, contributing a subtle malty depth at approximately 4 ppm. What sets this expression apart within the finishing category is the in-house rum cask seasoning programme: rather than sourcing pre-used rum barrels, Balvenie controls the seasoning itself, determining exactly how much rum character each cask imparts. Bottled at 43% ABV, chill-filtered, with Robbie Dhu spring water used for dilution to proof.
