That decision is structural, not cosmetic. 100% Dankowskie Gold rye, sourced under long-term contracts from a small network of named Masovian Plain farms, is mashed, fermented with a proprietary distiller's yeast for approximately 72 hours at 35°C to 6–8% ABV, then rectified through a three-column system at Polmos Żyrardów before resting in stainless steel. Water comes exclusively from two on-site artesian wells — one at 41.5 m depth, one at 50.5 m — filtered through 17 quaternary glacial terraces and an 11-step purification system including reverse osmosis, arriving at hardness zero and pH 7.4. Post-rectification, the spirit passes through activated charcoal then cellulose particle filtration before bottling at 40% ABV — no sugar, no glycerin, no additives, as mandated by the Polska Wódka certified appellation. What separates this from neutral-grain vodkas is the Dankowskie cultivar itself: its high-starch, low-protein grain structure drives the characteristic almond, white pepper, and velvety mouthfeel that define the house style.
