Yamahai (mountain build) sake begins with natural lactobacillus colonization of the koji bed—a 2–3 week process requiring constant temperature vigilance—before yeast inoculation. This brewery's Shinjo expression draws from the cool, mineral-rich water and volcanic soil of Nagano's Shinjo district, elevation and aspect favoring slow ripening of Shinjo-grown sake rice.
The junmai base (no added alcohol) undergoes extended koji development, building enzymatic complexity that drives umami-forward fermentation. Yamahai typically produces lower alcohol yields and higher acidity than modern sokujo methods, creating structural tension between sweetness suppression and amino-acid density. Maturation in stainless steel preserves the raw fermentation signature without oak oxidation.
