Suminoe Tokubetsu Junmai originates from Nada, Hyogo Prefecture, Japan's most historically significant sake-brewing region. Nada's limestone-filtered groundwater and cool winters have anchored sake production for four centuries; this expression draws directly from that terroir foundation.
Tokubetsu junmai designation requires a minimum 60% rice polish ratio (seimaibuai), positioning this between everyday junmai and the more delicate ginjo category. Fermentation employs koji mold cultivation and multiple parallel fermentation (koji, yeast, and moromi working simultaneously) to extract clean, dry character without heavy residual sweetness. The brewing water's mineral profile—particularly calcium and magnesium from Nada's aquifer—shapes the sake's structure and mouthfeel.
The 1.8 L format (isshobin) is the traditional serving vessel in Japan, designed for household consumption and optimal flavor stability. Suminoe's expression delivers the hallmark Nada profile: restrained aromatics, dry finish, and mineral undertone that reflects both water chemistry and brewing discipline rather than fruit-forward expression.
