In 1882, third-generation brewer Tokukichi Saito renamed the family operation after the mountain looming above the Aga-machi brewery — a deliberate act of place-claiming that still defines every production decision made here. Kirinzan Distant Thunder is brewed at the foot of Mt. Kirinzan in Higashi-kanbara-gun, Niigata, where approximately 94% of the surrounding landscape is dense beech and cedar forest. That canopy is not incidental: it filters the soft, low-mineral water drawn from the Tokonami River basin through forest soils before it reaches the brewery, and soft water is the technical engine of Niigata's signature Tanrei Karakuchi — light, dry, and clean — by enabling extended, slow, cold fermentation without the mineral interference that accelerates yeast activity. The rice is Gohyakumangoku, Niigata's workhorse variety, polished to 55% seimaibuai (Junmai Ginjo tier), sourced entirely within a 10 km radius through contracts with 55 local Aga-machi growers — a supply chain that took nearly 30 years to build and is now managed by Kirinzan's own in-house agricultural division. Fermentation uses sokujo moto starter and proprietary G901 yeast, a Niigata-associated strain selected for its restrained aromatic output. Where most ginjo breweries amplify ester production for fragrant showmanship, Kirinzan's G901 deliberately suppresses it, directing energy toward a delicate umami backbone and a razor-sharp, dry finish. The result is a sake that breaks the ginjo convention of aromatic spectacle in favour of structural precision and temperature versatility.
