Junmai Ginjo Kawasemi Label (720 ml)
฿฿
Junmai Ginjo.
Kariho Junmai Ginjo Kawasemi originates from Kariho, a subregion of Niigata Prefecture renowned for pristine snowmelt water and clay-rich alluvial soils that impart mineral character to sake. The brewery sources sake rice polished to 50% of its original grain, meeting ginjo classification standards, and employs clean fermentation techniques typical of Niigata's signature dry, aromatic house style. The Kawasemi label represents the brewery's commitment to expressing terroir through restraint—minimal intervention allows the water's mineral profile and the rice's delicate aromatics to dominate. This expression drinks best within 1–2 years of release, served chilled to amplify its crystalline structure.
