The brewery sources rice polished to 50% of its original grain—the daiginjo threshold—exposing the starchy heart where fermentation yields its most delicate aromatics. Fermentation proceeds through multiple parallel koji pathways, a technique that builds complexity while maintaining the crystalline purity Niigata is known for. The name "Sake-Mirai" (future sake) signals a forward-looking house style: clean, mineral-driven, with minimal residual sweetness. This expression drinks best chilled to 45–50°F, where its structural precision emerges fully.
