Bojimaya's Junmai Muroka Nama Genshu originates in Niigata Prefecture, Japan's most celebrated sake region, where cool mountain springs and alluvial plains produce some of the world's cleanest brewing water and highest-quality sake rice. The brewery sources locally-grown Yamada Nishiki and Gohyakumangoku rice varieties, polished to the junmai standard (≤70% remaining grain), then ferments in temperature-controlled tanks using traditional koji-kin cultures.
This expression is bottled muroka (unfiltered) and nama (unpasteurized), preserving live yeast and enzyme activity that creates a distinctly fresh, volatile aromatic profile. The genshu designation means full proof—no water dilution post-fermentation, concentrating both alcohol (typically 17–18% ABV) and the delicate esters produced during cool fermentation. The sake is typically stored at near-freezing temperatures to arrest oxidation and maintain the volatile compounds that define nama character.
Niigata's cool climate and mineral-rich water impart a signature dry, crystalline quality; the unpasteurized state amplifies green-fruit and floral volatility that fades within weeks of opening. Drink within 1–2 weeks of purchase, chilled to 8–12°C, to experience the full aromatic intensity.
