Saint James Imperial "Rhum Agricole" White (700 ml)

Saint James Imperial represents the uncompromising agricole tradition of Martinique's oldest continuously operating distillery. Founded in 1765 on the Sainte-Marie estate in the Lamentin region, Saint James distills fresh-pressed cane juice (vesou) rather than molasses, a distinction that defines true rhum agricole under French AOC law.

The Imperial white expression is fermented in stainless steel and bottled without oak aging, preserving the raw aromatic signature of the cane itself. At 50% ABV, the spirit carries the vegetal intensity and mineral backbone characteristic of Martinique's volcanic terroir—the distillery's cane fields sit on iron-rich soil derived from the island's dormant volcanic geology.

This is unfiltered agricole in its most transparent form: no color adjustment, no softening through wood contact. The fermentation profile emphasizes the yeast-driven esters native to the cane juice, creating a spirit that reads more as a botanical distillate than a mellowed spirit. Agricole blanc functions as a category anchor—the reference point against which aged expressions are measured.
