Francisco Alfredo Pellas Canessa founded the Ingenio San Antonio estate in 1890, and five generations later the family still seals every barrel with a local Nicaraguan plantain leaf before sending it into warehouses that have never seen an air-conditioner. That deliberate refusal of climate control is the technical core of the Slow-Aged™ process: barrels rest in the Pacific lowland heat of Chichigalpa, roughly 8 km from San Cristóbal — Nicaragua's tallest active volcano at 1,745 m — where temperatures accelerate wood extraction without artificial intervention. Volcanic ash continuously enriches the 35,000-acre estate's soil, and underground reservoirs carry mineral-laden water filtered through the same volcanic substrate.

The molasses comes exclusively from the estate's own Ingenio San Antonio mill, fermented with a proprietary in-house yeast for approximately 36 hours to ~9% ABV, then distilled five times through a five-column continuous still to ~96% ABV — a deliberately neutral distillate that places the entire flavour burden on the barrel. Spirit enters re-charred ex-bourbon American white oak at 77% ABV and ages for seven years under purely natural tropical conditions across ~320,000 simultaneously aging barrels on-site.

What separates this expression from virtually every Spanish-style rum at its price tier: zero added sugar, caramel, or colouring — the dry, clean texture is structural, not cosmetic. The result is toasted oak, vanilla, and ripe tropical fruit without the sticky residue that defines most sweetened competitors. Fair Trade USA and carbon-neutral certified, powered entirely by sugarcane bagasse.
