When Facundo Bacardí Massó founded his distillery in Santiago de Cuba in 1862, his deliberate break from the heavy, funky rums of the era was the point — he installed a column still and introduced charcoal filtration specifically to produce a lighter, cleaner spirit that could compete with European spirits in cocktail culture. That founding philosophy is still the technical blueprint for Carta Blanca today.
Santiago de Cuba sits at the eastern end of the island, where a warm, humid Caribbean climate accelerates interaction between spirit and wood during the aging phase. Carta Blanca is distilled from molasses in continuous column stills, which strip heavier congeners and esters to produce a high-proof, clean distillate. The rum is then aged briefly in American white oak ex-bourbon barrels before undergoing charcoal filtration, which removes residual color and further lightens the body — the aging is a flavor-building step, not a color-retention one.
What sets Carta Blanca apart within the white rum category is that filtration-after-aging approach: most white rums are either unaged or filtered to near-neutral; Bacardí deliberately builds oak-derived vanilla and soft dried-fruit character first, then strips the color while retaining those aromatic compounds. The result is a dry, clean white rum with more mid-palate texture than its appearance suggests.
