That founding logic governs Banane du Brésil today. The Loire Valley facility, historically dubbed the Garden of France, sources its base spirit from sugar beet neutral spirit, chosen for its flavour-neutral canvas, allowing the banana macerate to read with unusual clarity. What separates this expression from the category is the deliberate incorporation of oak-aged Cognac as a blending component — a structural decision that introduces genuine spirit depth and a faint dried-fruit complexity absent from banana liqueurs built on neutral spirit alone. The banana itself undergoes controlled maceration with light, temperature, and oxygen carefully managed to preserve the aromatic integrity of the fruit rather than driving toward caramelised or artificial registers. Each batch passes a tasting panel before bottling, with standard filtration applied. No wood aging is applied to the finished liqueur; the Cognac component provides oak character without barrel maturation of the blend itself. The result is a banana liqueur that reads as ripe tropical fruit with a dry, spirit-driven finish — structurally closer to a fruit-forward brandy blend than a crème-style cordial.
