Kitaoka Honten has operated from the entrance to Yoshino-Kumano National Park since 1868, when the seventh-generation head Sojuro consolidated the family's four-century Yoshino commercial roots into sake brewing exclusively. That same commitment to place-driven ingredients now extends to the brewery's fruit liqueur line, where the botanical infusion method — steeping seasonal fruit in alcohol with sugar syrup — mirrors the precision applied to the brewery's cherry-blossom-yeast sake fermentations. The water source throughout is Oku-Yoshino Forest Water (奥吉野の森林水), drawn from mountain streams cutting through Yoshino's UNESCO-listed cedar forests: low in iron, soft in mineral profile, and structurally gentle — qualities that carry directly into the liqueur's texture. As a Fruit Cocktails Base, this Plum Sour expression is formulated explicitly as a mixing concentrate rather than a sipping liqueur, a deliberate departure from the brewery's contemplative Yatagarasu sake philosophy. The tart plum profile is calibrated for dilution — over soda, shaken with ice, or lengthened with sparkling water — delivering the sour-fruit tension that defines the category without requiring bartender adjustment.
