Pallini, a Roman liqueur house founded in 1875, built its limoncello around a single lemon variety unavailable to most producers: the Sfusato Amalfitano, the elongated, thick-skinned lemon indigenous to the terraced cliffsides of the Amalfi Coast. That specificity is the product's entire argument.
Sfusato Amalfitano trees grow on steep, south-facing volcanic terraces above the Tyrrhenian Sea, where salt-laden maritime air, intense Mediterranean sun, and well-drained volcanic soils concentrate essential oils in the zest to a degree measurably higher than flatland-grown fruit. The result is a peel with pronounced floral lift alongside the citrus.
Production relies on cold maceration of fresh Sfusato peels in neutral grain spirit — heat is deliberately avoided to preserve volatile aromatic compounds that would otherwise dissipate. No artificial flavoring or coloring is used. The liqueur is bottled at 26% ABV, lower than many competitors, which keeps the texture viscous without masking the lemon's natural bitterness.
The exclusive use of a single, geographically restricted lemon cultivar — rather than the generic Femminello used across most commercial limoncello — is what separates this expression categorically from the broader market.
