In 1973, Giannola and Benito Nonino made a decision that rewrote Italian spirits law: they separated individual grape pomaces by variety — beginning with the near-extinct Friulian Picolit — and distilled each alone, creating the legal category of Monovitigno® grappa where none had existed. Grappa Tradizione is the house's foundational expression of that philosophy, drawing on Friulian pomace sourced from the Percoto estate in Pavia di Udine, northeastern Friuli-Venezia Giulia. Fresh, destalked pomace arrives at the distillery within one hour of pressing and is either distilled immediately (red, already-fermented pomace) or held under vacuum in stainless-steel tanks at controlled temperature for up to 48 hours (white sweet pomace) — a protocol that eliminates the acetic and sulfurous off-notes endemic to silo-stored material. Distillation runs in bespoke copper steam discontinuous (batch) stills designed by Benito Nonino himself, with precise head-and-tail cuts made by hand. Aging proceeds in small casks drawn from a seven-warehouse inventory of Nevers, Limousin, Grésigne oak, ex-Sherry, ex-Sauternes, Acacia, wild Cherry, Ash, and Pear wood — zero color additives across the entire range. What distinguishes Tradizione within the Nonino lineup is its role as the multi-varietal Friulian blend: where the Monovitigno® series isolates a single grape, Tradizione assembles the regional mosaic. Non-vintage by nature; drink now or hold — the wood regime rewards patience.
