Sui emerges from Suntory's Osaka Spirits & Liqueurs Craft Distillery, the company's dedicated gin, vodka, and liqueur facility that opened in 2024–2025, separating craft spirits production from the legacy whisky distilleries at Yamazaki and Hakushu. The Osaka plant brings urban precision to a category the house helped define in Japan. The six Japanese botanicals — sakura flower, sakura leaf, yuzu peel, sencha tea, gyokuro tea, and sansho pepper — are the same signature set that distinguishes Suntory's Japanese gin range from London Dry convention; individual distillation of each botanical is the technical decision that prevents the heavier botanicals (sansho's citrus-pepper heat, gyokuro's umami depth) from overwhelming the more volatile floral and citrus components. What separates Sui within the Suntory gin lineup is its positioning as a craft-distillery-specific expression, produced at a facility purpose-built for small-batch spirits rather than scaled alongside whisky production.
