Chalong Bay Distillery sits on the Andaman coast of Phang Nga Province, where limestone karsts and tidal mangrove swamps define the terroir. The distillery sources molasses from regional sugarcane processing, fermenting in temperature-controlled vessels that exploit the tropical maritime climate—warm days, salt-laden air, and consistent humidity that accelerates maturation cycles.

This Tropical Set pairs two expressions: a white rum (unaged, bottled at proof post-distillation) and an aged rum (matured in ex-bourbon casks under equatorial conditions, where the "angel's share" runs 8–12% annually). The white spirit carries the direct signature of fermentation and copper-pot distillation; the aged component develops color and wood integration rapidly in Phang Nga's heat, compressing what would take years in temperate climates into months.

The set format allows direct comparison of base spirit character against oak influence—a pedagogical choice that reveals how tropical aging reshapes molasses-derived esters and congeners.
