Maurice Hennessy invented the XO category in 1870 — not for commerce, but as a private blend for family and friends. That founding gesture of excess-for-its-own-sake is precisely what the Year of the Horse limited edition commemorates, wrapping the same benchmark multi-cru blend in a collectible release tied to the Chinese lunar calendar. Sourcing spans all four premier crus — Grande Champagne's shallow clay-limestone chalk (the cru most prized for long aging), Petite Champagne, the clay-flint soils of Borderies, and Fins Bois — with each terroir contributing a distinct register of aromatic complexity. Double distillation in Charentais copper pot stills proceeds with a deliberate house transgression: unlike Martell, Hennessy distills both with and without lees, and returns heads and tails to the brouillis before the second pass, concentrating congeners for a richer, darker spirit profile. The resulting eaux-de-vie are aged in hand-cooperaged Limousin oak barrels — produced at Hennessy's own cooperage from 80-year-minimum trees felled from its own forests — and rotated across 65 cellars, including humid riverside chais that yield rounder, mellower character. The XO blend assembles over 100 individual eaux-de-vie aged up to approximately 30 years, selected by the eighth-generation Fillioux Master Blender lineage from a pool of ~10,000 reviewed annually. What no peer replicates: an unbroken 200-year single-family blending succession, now encoded in a lunar-year collector's bottle.
