Martell Chanteloup XXO (700 ml)
฿27,999
Château de Chanteloup, acquired by the Martell family in 1838, lends its name to this prestige XXO expression — a tier that sits above XO in maturation depth and blend complexity. The Borderies cru, the smallest of Cognac's six growing zones, anchors the blend: its silica-clay soils produce eaux-de-vie of distinctively floral, candied-violet character that no other cru replicates, and Martell purchases 50–60% of the entire Borderies cru's output, making this terroir commitment the most concentrated in the industry. Distillation at the Gallienne Distillery begins with a deliberate departure from every other major house: the base Ugni Blanc wine is rested until fully clear and all lees are removed before entering the copper alambic Charentais stills — a lees-free protocol that strips the distillate of raw grain character and places the entire aromatic burden on oak. Aging proceeds exclusively in fine-grained cecillus (Tronçais-style) French oak, lightly toasted for a minimum of 17–20 minutes, with a combination of new barrels for spice and older 'red' barrels for fruit-forward development; once peak maturity is reached, eaux-de-vie are transferred to glass demijohns to arrest further evolution. The XXO designation signals extended aging beyond the XO minimum, drawing on the house's reserves — some dating to 1830 — stored in the Jean Martell cellar. The result is a spirit whose aromatic architecture is built almost entirely in wood, not from the distillate itself: a structural inversion that defines Martell's house identity.
