Founded in 1724 by Rémy Martin — a Charente vintner born near Rouillac — the house marks its third century with this commemorative XO, a blend that distils the same terroir philosophy the founder codified: source exclusively from Grande and Petite Champagne, never dilute with lesser crus. That commitment is not marketing; it is a legal constraint the house imposes on itself across every expression it produces, from entry VSOP to Louis XIII.

Both crus sit on deep chalky-calcareous subsoils whose permeability retains moisture through dry summers, sustaining grape acidity and aromatic intensity in the predominantly Ugni Blanc fruit. Grande Champagne's tighter chalk delivers the structural backbone; Petite Champagne contributes aromatic generosity — together qualifying the blend as Cognac Fine Champagne AOC.

The house's defining technical signature: distillation on the lees in small charentais alembic copper pot stills, a practice most rivals abandon at the racking stage. Each double-distillation cycle runs approximately 24 hours. The resulting eaux-de-vie — up to 400 individual parcels, youngest minimum 10 years, oldest exceeding 37 — are matured in French Limousin oak from trees at least a century old, seasoned outdoors 2–3 years before coopering, progressively transferred into older barrels as complexity develops.
