When Rémy Martin established his Charente trading house in 1724, he was already a working vintner — a grower's instinct that persists today in the house's most consequential decision: distilling on the lees, retaining residual yeast sediment through each 24-hour charentais pot-still run rather than racking clean as most rivals do. That single technical choice is the aromatic engine behind the XO. The blend draws exclusively from Grande Champagne and Petite Champagne — the only two crus permitted under the Fine Champagne AOC — where deep calcareous, permeable subsoils retain moisture through dry seasons, sustaining grape acidity and concentrating aromatic compounds that leaner terroirs cannot produce. Up to 400 individually selected eaux-de-vie, the youngest a minimum 10 years old and the oldest exceeding 30, are assembled by the cellar master and aged in French Limousin oak from trees at least a century old, seasoned outdoors for 2–3 years before coopering; younger barrels build structure, progressively older barrels slow the oxygen exchange and refine texture. The special feature here is categorical: Rémy Martin is the only major cognac house whose entire production — not just prestige cuvées — qualifies as Fine Champagne, a terroir restriction competitors apply selectively if at all. Bottled at 40% ABV, the XO arrives in a gift pack, presenting dried fruit, candied orange peel, rancio, and toasted oak drawn from three decades of chalky-soil maturation.
