Alexandre Gabriel's decision to reject the VS/VSOP/XO hierarchy entirely — naming expressions by character rather than legal age tier — reaches its most uncompromising expression in the Abel, a 45-year-old drawn from the Logis d'Angeac estate in Angeac-Champagne's 'golden triangle.' The estate's marine fossil limestone soils, among the most intensely chalky in all of Grande Champagne, drive exceptional natural acidity into the base Ugni Blanc, providing the structural backbone that survives four and a half decades of oak contact without collapsing into sweetness. Distillation is conducted slowly on unfiltered fine lees in unusually small 25 hl copper pot stills with onion-shaped heads, a configuration that concentrates aromatic precursors most large houses sacrifice for throughput. Aging unfolds across seven cellars at Château de Bonbonnet, where cement-floored dry cellars (30–60% humidity) and earthen-floored humid cellars (70–100% humidity) are used in deliberate rotation, building the layered rancio character that only decades of varied oxidative exposure can produce. What separates Abel from peers at this age is the house's insistence on 100% single-cru Grande Champagne fruit — no blending across appellations — meaning every aromatic thread traces back to one terroir. At 45 years, the chalk-driven tension of the site remains legible beneath the deep rancio and dried-fruit concentration.
