The fruit remains suspended in the spirit as it matures, infusing the distillate with fresh pomaceous character while the brandy itself develops complexity.
Terroir & Source: Normandy's cider-apple belt, where limestone-rich soils and cool Atlantic influence produce high-acid, low-sugar fruit ideal for brandy production. The apples themselves—likely a blend of cider varieties such as Binet Rouge or Frequin—are harvested from orchards across the Pays d'Auge region.
Production Method: Massenez sources cider or perry base spirit, then distills to approximately 40% ABV. The critical technique: a whole, unpeeled apple is inserted into the bottle before or during early aging, where it remains as the spirit oxidizes gently in glass or brief oak contact. This method—part marketing, part genuine flavor integration—allows the apple's cellular structure to leach tannins and subtle phenolics into the surrounding liquid over months.
Special Feature: The visible apple transforms the bottle into a conversation object while functionally contributing green, slightly astringent notes that cut through the spirit's natural sweetness. Few producers execute this technique; most are gimmick-driven. Massenez's version maintains structural integrity—the apple does not rot or ferment further inside the sealed vessel.
