Monchiero Carbone is a family-run estate based in Canale, established in 1990 through the union of the Monchiero and Carbone families, both of whom possess winemaking roots dating back to 1918. While the winery is headquartered in the heart of Roero, their passion for indigenous Piedmontese varieties led them to Gavi in 2009. This specific Gavi di Gavi is born from a collaboration with a long-time family friend and fellow oenologist who owns historic vineyards in Rovereto di Gavi, widely considered the most prestigious "cru" area within the commune. By sourcing grapes from this central zone, Monchiero Carbone ensures the purest expression of the Cortese grape, reflecting a heritage of quality that has transitioned from early 20th-century family farming to modern international acclaim.

The unique terroir of Gavi di Gavi is defined by limestone-rich soils and a distinctive microclimate influenced by cooling breezes from the nearby Ligurian Sea, which allow the Cortese grapes to ripen slowly while retaining high natural acidity and mineral tension. Monchiero Carbone’s winemaking philosophy focuses on preserving this crystalline purity through precise, low-impact practices. The grapes are vinified on-site in Gavi using pneumatic pressing to obtain the delicate "flower wine," which then undergoes fermentation in stainless steel at controlled temperatures. To build texture and complexity without losing freshness, the wine is refined on selected lees for four months with periodic bâtonnage, resulting in an elegant white wine that balances vibrant floral aromatics with a signature salty minerality and almond finish.
