St. Hugo was established in 1983 as Penfolds' prestige label before becoming its own marque — a lineage that placed Eden Valley Riesling at the heart of its white wine identity from the outset. Eden Valley, perched at 400–500 metres above the Barossa floor, is geologically distinct from the warm valley below: ancient slate and quartz-rich soils over decomposed granite drain rapidly, stressing vines into producing concentrated, high-acid fruit rather than broad, phenolic weight. The altitude delivers a diurnal temperature swing that preserves aromatic tension and natural acidity through the growing season. In the winery, the wine is handled with restraint — cool-fermented in stainless steel to lock in primary aromatics, with no oak contact and no malolactic fermentation, preserving the variety's structural spine intact. What separates this expression from most Australian Riesling is its deliberate architecture for cellaring: the combination of Eden Valley's natural acidity and low-intervention winemaking produces a wine that tightens rather than fades over time. Young, it delivers citrus pith and green apple austerity; given five to ten years, it develops the petrol-and-toast complexity that defines aged Australian Riesling at its most compelling.
