SaleStory: Pecorino, once nearly extinct in southern Italy, has resurged as Abruzzo's signature white—and La Valentina's Colline Pescaresi bottling anchors that revival on the limestone ridges east of Montepulciano.
Site & Terroir: The Colline Pescaresi (Pescara Hills) sit at 200–350 meters elevation, their soils dominated by Cretaceous limestone and marl with clay substructure. The aspect faces northeast toward the Adriatic, moderating summer heat and extending the growing season. This geology imparts a saline, flinty minerality characteristic of the zone.
Technique: Pecorino grapes are harvested at optimal ripeness and undergo cool-temperature fermentation in stainless steel, preserving aromatic volatility and acidity. The wine is aged on fine lees for 4–5 months, building textural complexity without oak influence. Bottling occurs in spring following vintage, allowing the wine to settle before release.
Special Feature: Pecorino's naturally high acidity (often 7.5–8.5 g/L) and low pH make it one of Italy's most age-worthy whites; this expression will develop secondary complexity over 5–7 years, moving from primary citrus toward honeyed stone fruit and herbal depth.
