The producer, established in 1957, has built its reputation on respecting varietal character over oak intervention—a deliberate choice in a region where oak aging remains optional.
Fermentation occurs in temperature-controlled stainless steel with native yeasts, preserving the aromatic volatility and acidity that limestone terroir demands. No malolactic conversion; no oak aging. This restraint allows the wine to express the saline, flinty character of the site rather than mask it.
