Saint-Aubin's Remilly climat sits on the eastern flank of the Côte de Beaune, where Jurassic limestone and clay soils drain steeply toward the valley. Domaine Derain's parcel captures the mineral spine of this mid-slope exposure, where morning sun and afternoon shade create the tension that defines the appellation's best whites.
The fruit undergoes temperature-controlled fermentation in stainless steel, preserving the aromatic precision of the vintage. Post-fermentation, the wine remains on its primary lees for 10–12 months without oak contact, allowing autolytic complexity to build while acidity remains crisp and defined. This unoaked regime is deliberate—it lets the terroir's limestone minerality speak without the softening influence of wood.
The result is a wine of high-toned acidity and lean structure, built for food rather than solo contemplation. Remilly's aspect and soil composition push toward citrus and white stone fruit rather than the riper profiles of lower-lying Saint-Aubin sites. Drink 2–8 years from vintage.
