Les Chalumeaux sits on the eastern flank of Puligny-Montrachet, where shallow, well-drained limestone-and-clay soils over Bathonian bedrock concentrate tension and mineral precision rather than volume. The 2020 growing season delivered cool nights and intense sunlight, producing grapes with bold structure, steeliness, and concentrated spice — conditions that reward patience over early drinking. Vinification follows the house's white Burgundy signature: grapes crushed before pressing, fermentation initiated in stainless steel without settling, then transferred hot into 228-litre French oak pièces — made in-house at the Louis Latour cooperage from oak air-dried 24–36 months — to complete both alcoholic and malolactic fermentation; no lees-stirring at any stage, a deliberate choice that preserves primary fruit definition over creamy autolytic texture. What distinguishes this house approach from most Côte de Beaune peers is precisely that absence of bâtonnage combined with in-house barrel production, yielding a structured, oak-integrated style rather than a lees-driven one.
