Story: Domaines Albert Bichot's Pouilly-Fuissé originates from the southern Mâconnais, where limestone-rich soils have anchored Chardonnay cultivation for centuries. The appellation's four crus—Château-Fuissé, Clos de Reyssié, Les Perrières, and Pouilly-Loché—sit at 250–350 meters elevation on southeast-facing slopes, where morning sun and afternoon shade create ideal ripening conditions.
Terroir & Technique: Bichot sources from parcels within this limestone terroir, where clay-limestone soils impart mineral precision. Fruit is fermented in temperature-controlled stainless steel, then aged in neutral oak for 6–8 months to preserve primary aromatics while building textural weight. No malolactic fermentation is induced, preserving the wine's natural acidity and flinty character.
Special Feature: This is a non-oaked or minimal-oak expression—Bichot's house style favors the limestone's voice over wood influence, making it a transparent window into Pouilly-Fuissé's mineral identity rather than a fruit-forward interpretation.
