Jermann's Chardonnay originates from the Collio subregion of Friuli-Venezia Giulia, where the northeastern Italian border meets Slovenia. The vineyard sites rest on calcareous clay and marl soils at moderate elevation, with morning fog from the Adriatic moderating ripening and preserving acidity through the growing season.
The fruit undergoes barrel fermentation in French oak (typically 50% new, 50% neutral), with extended lees aging of 6–8 months before bottling. This technique builds textural weight and subtle oak integration without masking the mineral backbone of the terroir. Jermann avoids malolactic fermentation, preserving the wine's natural acidity and freshness.
The expression balances ripe stone fruit with saline minerality and subtle hazelnut complexity from oak contact. Drinking window: 2–5 years from vintage, though well-structured examples age gracefully to 8+ years.
