The Adelaide Hills component grows on well-drained soils at altitude, producing Chardonnay with lower sugar accumulation and higher tartaric retention than Barossa floor fruit.
Fruit is whole-bunch pressed — the same entry point used for Yattarna (Bin 144) — separating clean juice from phenolic extraction before fermentation. Maturation proceeds in French oak rather than the American hogsheads that define Penfolds' red program, a deliberate choice that keeps the oak influence finer-grained and the fruit profile primary. Lees contact during barrel aging builds texture without obscuring the site-driven acidity.
What distinguishes Bin 311 categorically is its position as Penfolds' proof-of-concept for cool-climate white winemaking: the same whole-bunch pressing protocol as the flagship Yattarna, at a fraction of the price, making the house's white winemaking philosophy directly accessible.
