Bin 311 occupies a deliberate counterpoint within the Penfolds portfolio: where the house built its reputation on multi-regional blending that subordinates place to winemaker vision, Bin 311 is constructed to let cool-climate fruit speak — sourced from high-altitude sites including Adelaide Hills, where elevation and diurnal temperature swing preserve natural acidity and tighten phenolic development. The Adelaide Hills component grows on well-drained soils at altitude, producing Chardonnay with lower sugar accumulation and higher tartaric retention than Barossa floor fruit.

Fruit is whole-bunch pressed — the same entry point used for Yattarna (Bin 144) — separating clean juice from phenolic extraction before fermentation. Maturation proceeds in French oak rather than the American hogsheads that define Penfolds' red program, a deliberate choice that keeps the oak influence finer-grained and the fruit profile primary. Lees contact during barrel aging builds texture without obscuring the site-driven acidity.
