Sato's L'atypique is a skin-contact orange wine crafted from Pinot Grigio in Central Otago's Bannockburn subregion. Extended contact with grape skins imparts a distinctive amber hue and layered aromatic profile, moving beyond the varietal's typical white-wine expression. The wine balances primary stone fruit and honey notes with secondary spice and herbal complexity, while tertiary oxidative development adds minerality and subtle tannin structure.
