Founded in 1880 and now stewarded by the fourth generation, Maison Joseph Drouhin completed a full organic and biodynamic conversion across its 100-hectare Burgundy estate — earning ECOCERT certification for the 2009 vintage — a commitment almost without precedent for a négociant-domaine of this scale. Saint-Véran sits at the southern tip of the Mâconnais, where Chardonnay grows on limestone-rich soils with clay subsoil, delivering the appellation's characteristic tension between chalky mineral grip and ripe stone fruit. Vinification follows Drouhin's white Burgundy protocol: slow pneumatic pressing with free-run juice separated from press fractions, then alcoholic and malolactic fermentation conducted in French high-forest oak barrels using indigenous yeasts, with light bâtonnage during élevage. New oak is kept restrained — 10–25% depending on appellation tier — ensuring the barrel acts as a vessel for texture rather than flavour. What distinguishes this cuvée within its peer group is Drouhin's house-wide restriction to Chardonnay and Pinot Noir only, meaning every decision in the cellar is calibrated exclusively around these two varieties — no dilution of focus. The 2013 Burgundy vintage delivered naturally high acidity and precise, tightly wound fruit; this Saint-Véran will have developed secondary complexity by now and is drinking well into the mid-2020s.
