Oddbird was founded in Sweden in 2014 with a single deliberate constraint: produce non-alcoholic wines that are made as wine first, then dealcoholized — not grape juice dressed up with carbonation. The Blanc de Blancs begins its life as a fully fermented Chardonnay-based sparkling wine sourced from Languedoc-Roussillon, where the region's warm Mediterranean climate and limestone-clay soils push Chardonnay toward ripe stone fruit and generous texture before any intervention.
The defining technique is cold vacuum distillation, which removes alcohol at low temperatures (below 30°C) to preserve volatile aromatics that conventional heat-based dealcoholization destroys. The result retains the wine's natural CO₂ mousse structure and acidity rather than relying on artificial carbonation. Residual alcohol sits below 0.5% ABV, meeting EU non-alcoholic classification.
What separates this expression from most non-alcoholic sparkling is the retention of genuine yeast-derived complexity from the original fermentation — a quality most dealcoholized wines sacrifice entirely. The palate runs lean and citrus-driven with a persistent bead, making it one of the few non-alcoholic sparklers that behaves structurally like a Blanc de Blancs rather than a flavored water.
