Gremillet's rosé Brut originates in the Aube, Champagne's southernmost and coolest subregion, where chalk-marl soils and continental influence shape lean, mineral-driven sparkling wines. The house sources primarily Pinot Noir from low-yielding parcels, supplemented with Chardonnay for structure. Dosage remains restrained—typical of the Brut classification—allowing acidity and mineral tension to dominate. Extended aging on lees (minimum 15 months, often longer) develops brioche undertones and textural complexity without masking the wine's core salinity. The rosé color derives from controlled skin contact during pressing rather than saignée, preserving the delicate red-fruit profile characteristic of cool-climate Pinot. Aube producers like Gremillet occupy a distinct position: lower prices than Côte des Blancs houses, yet comparable precision and aging potential. Drink 2024–2032.
