N. 1 Valdobbiadene Prosecco D.O.C.G. Brut
฿
Bottignolo's Valdobbiadene Prosecco originates from the UNESCO-listed rolling hills of Valdobbiadene in northeastern Veneto, where marl and limestone soils at 200–300 meters elevation create the mineral backbone characteristic of the zone's finest expressions.
This Brut is produced via the Charmat method — secondary fermentation in sealed steel tanks rather than bottle — which preserves the delicate floral aromatics and crisp acidity that define modern Prosecco. The wine undergoes controlled temperature fermentation to retain volatile esters, then brief aging on lees before release, maintaining freshness and fine bubble structure without oxidative complexity.
The special distinction here lies in Bottignolo's commitment to single-vineyard transparency: this bottling carries no dosage adjustment (true Brut at <6 g/L residual sugar), allowing the terroir's natural acidity and mineral salinity to dominate rather than sugar masking. Valdobbiadene's steep, south-facing slopes ensure full phenolic ripeness in Glera grapes while maintaining the high acidity essential to sparkling wine balance.
Drink within 2–3 years of release for maximum aromatic vibrancy.
