The Calmaggiore bottling sources Glera grapes from hillside parcels at 200–300 meters elevation, where diurnal temperature swings preserve acidity and mineral tension.
Charmat method fermentation — the defining technique of Prosecco — occurs in sealed steel tanks rather than bottle, capturing CO₂ in-situ and retaining the wine's delicate aromatics. Brut dosage (residual sugar under 12 g/L) emphasizes the wine's natural dryness and allows the limestone minerality to surface without sweetness masking it.
The special feature here is restraint: many Proseccos drift toward off-dry or demi-sec to broaden appeal, but Calmaggiore commits to true brut classification, letting Glera's green-apple acidity and white-stone salinity dominate. Drink 2024–2026 for maximum freshness and perlage finesse.
