The 2012 vintage marks the first year Roederer's Cristal estate — 45 Grand Cru plots across seven communes — was farmed entirely under biodynamic certification, a milestone Chef de Cave Jean-Baptiste Lécaillon has cited as his reference point for precision and character. That same discipline extends to this Brut Nature, where zero dosage strips away any sugar correction, leaving the wine entirely dependent on the quality of the raw material. The estate's Grand and Premier Cru parcels on the Montagne de Reims and Côte des Blancs sit on shallow chalk topsoil — as little as 20 cm — over pure chalk bedrock, a geology that drives the piercing mineral salinity and taut acidity that make zero-dosage Champagne viable without austerity. Approximately 70% Pinot Noir from Montagne de Reims, 30% Chardonnay; a portion vinified in small oak vats without malolactic fermentation to build structural backbone. Minimum four years on lees before disgorgement, then six months of post-disgorgement rest. The special feature here is the collaboration with designer Philippe Starck, who co-created this cuvée specifically as a zero-dosage expression — a deliberate transgression for a house whose NV carries 9 g/L. The 2012 vintage delivers fruit richness that cushions the absence of dosage; the drinking window extends comfortably through the late 2020s.
