The family's vinification practices leans toward a traditional method where different parcels are vinified separately. Natural yeast is used in smaller tanks, selected yeast is used in larger tanks and malolactic fermentaion is avoided, this allows the wine to be full in flavour and finely balanced at a low dosage while showing firmness of structure.
