When chef de cave Émilien Boutillat took the helm in 2018 at just 31 — the youngest to lead a major Champagne house — he doubled down on a deliberate technical choice: blocking malolactic fermentation, in part or fully, to preserve raw acidity and fruit definition rather than chasing the creamy, autolytic weight favoured by many grandes maisons. The result is a house style that reads as energetic and fruit-driven rather than toasty and broad.

Fruit is drawn from 110+ crus across Montagne de Reims, Vallée de la Marne, Côte des Blancs, and Côte des Bar, all rooted in Champagne's classic chalk subsoil — a geology that drives the chalky minerality and taut mousse that define the house signature. Each cru and variety is vinified separately in stainless steel, preserving individual terroir expression before assemblage by blind tasting.

The blend runs approximately 50–55% Pinot Noir, ~30% Pinot Meunier, 15–20% Chardonnay, with a minimum 25% reserve wines anchoring consistency across disgorgement lots. Lees aging runs a minimum of 24 months, and dosage is held at approximately 8 g/L — restrained for a Brut, reinforcing the house's low-intervention direction. No oak touches the wine at any stage.

What separates this from the Brut NV category at large is the deliberate MLF block combined with below-average dosage: a structural decision that prioritises citrus tension and Pinot Noir fruit clarity over softness. Wine Spectator awarded the current Boutillat-era release 92 points, citing black cherry, toast point, white peach purée, and salted almond on a mouthwatering, spiced finish — drink on release.
