When Fabian Daviaux persuaded 70-plus grower families to abandon sulphur additions across their entire portfolio in 2019, the ambition extended beyond sparkling wine — Chavost's Ratafia Champenois Sans Sulfite applies the same zero-intervention logic to Champagne's traditional mistelle, a category where sulphur has historically been the default preservative. The result is one of the only commercially produced zero-SO₂ Ratafia in the appellation.
Fruit comes from Chavot-Courcourt's clay-limestone and chalky-limestone plots at the geographic junction of the Côte des Blancs and the Vallée de la Marne — a dual-soil mosaic that delivers both chalkboard tension and textural weight to the base must. Vines average 35–60 years of age; only first-press cuvée juice is used, taille excluded, preserving aromatic precision over volume.
Fermentation is arrested by the addition of Champagne eau-de-vie in the traditional mutage process, locking residual grape sugar before it converts. No added sulphites at any stage — naturally occurring SO₂ measured at the low end of Chavost's 6–18 mg/L range. Unfiltered and unfined, consistent with the house's bottling philosophy across all cuvées.
The special feature: zero-SO₂ Ratafia is genuinely rare — most producers rely on sulphur precisely because high residual sugar in an unfortified-adjacent product creates oxidative risk that Chavost accepts and manages through fruit quality alone.
