The producer employs low-pressure carbonation (frizzante, not spumante) and semi-dry residual sugar (amabile designation), preserving the grape's native tannin structure while softening the palate. Fermentation in stainless steel captures the varietal's dark cherry and plum character without oak interference. The special transgression here: Grasparossa is traditionally vinified dry; Cavicchioli's amabile expression inverts expectation, using residual sugar to amplify the wine's natural red-fruit generosity rather than mask it. Drink 2024–2026 for maximum freshness of the perlage and fruit definition.
