Monfort's Cuvée 85 Brut originates from the Trento Denomination of Controlled Origin in Italy's northernmost wine region, where the Dolomitic foothills meet continental Alpine influence. The vineyard sites sit on limestone-rich soils at 400–600 metres elevation, where cool nights and morning mists preserve acidity and mineral tension in the base wines.
The cuvée is produced via the Charmat method (tank fermentation), a technique that emphasizes freshness and aromatic purity over the extended autolysis character of traditional méthode champenoise. Base wines undergo secondary fermentation in sealed stainless steel for 60–90 days, building fine carbonation while retaining the delicate floral and stone-fruit profiles of the Chardonnay and Pinot Noir blend. The dosage is calibrated to Brut specification (6–15 g/L residual sugar), allowing the wine's natural acidity and mineral backbone to dominate.
The Cuvée 85 designation reflects a consistent house style rather than a vintage marker—a deliberate choice that allows Monfort to blend across multiple harvests for consistency in a region where vintage variation can be pronounced.
