When Eugène-Aimé Salon produced his 1905 vintage — 100% Chardonnay, single cru, single year — he invented a category that Delamotte now inherits structurally: in any year Salon does not declare, the contracted Le Mesnil-sur-Oger fruit flows directly into Delamotte, making this NV the sole Champagne in the world with a documented, recurring supply line to one of the most tightly allocated single-vintage cuvées ever made.
The Côte des Blancs Grand Crus anchoring this blend — Le Mesnil-sur-Oger primary, with Avize, Oger, and Cramant — sit on deep belemnite chalk, marine-fossil-rich and exceptionally free-draining, generating the saline tension and cut that defines the appellation's Chardonnay. Cool nights preserve natural acidity that no winemaking intervention can replicate.
Vinification is entirely in stainless steel, with no malolactic fermentation — a deliberate choice that keeps the chalk-driven acidity structurally intact rather than softening it toward creaminess. Reserve wines from at least three harvests are maintained in cellar and blended to sustain house consistency across the NV. Cellar Master Michel Fauconnet oversees production across both Salon and Delamotte under the Laurent-Perrier group.
What no peer NV Blanc de Blancs can claim: a contractual, year-on-year supply relationship with Salon's own Le Mesnil growers, meaning the terroir pedigree here is not aspirational — it is structural. Drink now through 5+ years; the no-malo backbone rewards short cellaring.
