Santa Julia
Santa Julia Cuy Cabernet Sauvignon Natural Wine
฿1,000
José Alberto Zuccardi named this label after his daughter Julia in the 1980s, but the decision that defines the Natural line came decades later: a deliberate break from Mendoza's heavily extracted, sulfur-propped mainstream in favour of ambient-yeast fermentation and zero additions — a transgression at any price point, let alone under ฿1,000. The Cabernet Sauvignon fruit is drawn from Familia Zuccardi's certified-organic holdings in Mendoza, where well-drained gravel and sandy soils force deep root development and restrict vigour, concentrating fruit character without irrigation-driven dilution. The arid continental climate — warm days, cold nights, minimal rainfall — preserves natural acidity that most Mendoza reds sacrifice to ripeness. Fermentation proceeds on indigenous yeasts with no sulfur additions, consistent with the Natural line's no-additions philosophy; the wine is bottled unfined and unfiltered, preserving microbial texture and site-specific aromatic fidelity. What sets this expression apart within its category is the combination of certified-organic viticulture at scale (Argentina's largest such holding) with a genuinely interventionist-free cellar protocol — a pairing almost nonexistent at this price tier in the New World. Drink on the younger side to capture the primary fruit and the tea-like, lightly grippy tannin structure characteristic of the Natural line's Mendoza reds.
