Joseph Mellot sources Pinot Noir from the limestone-clay soils of Sancerre's hillside parcels, where chalk-rich bedrock and cool Loire Valley nights preserve acidity and mineral tension in red wine—a rarity that demands explanation.

The vineyard sites sit at 250–300 metres elevation on the region's north-facing slopes, where morning fog and afternoon sun create a diurnal temperature swing that extends ripening into October. The soil composition—predominantly caillottes (small limestone fragments) mixed with clay—imparts a distinctive flinty minerality uncommon in Pinot Noir outside Burgundy.

Mellot employs whole-bunch fermentation in temperature-controlled vessels, a technique that preserves the grape's delicate aromatics while building structure through stem tannins rather than aggressive extraction. The wine sees 12 months in neutral French oak, allowing the fruit to develop without oak dominance. Malolactic fermentation occurs partially, retaining natural acidity.

The transgression here is intentional: Sancerre Rouge exists in the shadow of its white sibling, yet this expression proves Pinot Noir thrives in limestone terroir when ripeness is balanced against freshness. The 2021 vintage shows the wine's drinking window: approachable now, capable of 5–7 years' evolution.
