St. Hugo's Barossa Grenache Shiraz Mataro draws from the Barossa Valley's most established vineyard parcels, where sandy loam and ironstone soils at 250–350 metres elevation produce wines of concentrated dark fruit and savoury structure. The blend—dominated by Grenache with supporting Shiraz and Mataro—is fermented in temperature-controlled stainless steel before 12–14 months in French oak (mix of new and seasoned), allowing the three varieties to integrate while preserving varietal definition.
The GSM format reflects a Rhône-inspired philosophy adapted to Barossa's warmer terroir: Grenache provides red-fruit brightness and silky tannins, Shiraz adds structural backbone and dark berry depth, while Mataro (Mourvèdre) contributes earthy minerality and grip. This particular expression balances ripe stone fruit with peppery spice and dried herb undertones characteristic of warm-vintage Barossa fruit.
