The region's ~50°F diurnal temperature swing — scorching days followed by cold nights — preserves natural acidity while allowing full phenolic ripeness, the structural tension that separates Paso Robles from flatter warm-climate Cabernets. In the cellar, the wine undergoes 12 months in 60-gallon American oak barrels — predominantly medium and medium-plus toasted Missouri and Minnesota oak with toasted heads, 20% new — a deliberate choice that layers coconut-inflected spice without overwhelming the fruit.
